Matthew Zita

EXECUTIVE CHEF

Chef Zita, a New Jersey native who grew up in Rochester, NY, discovered his passion for cooking at an early age while making arancini, meatballs, and calzones with his grandparents. This early inspiration launched him into a culinary career right after high school, beginning at a French restaurant and later taking him across the country to work in diverse kitchens, from high-end establishments to plant-based concepts.

Chef Zita’s journey has included notable achievements, such as working at a Bib Gourmand-rated Italian restaurant in NYC, opening three restaurants in Hudson Yards, and overseeing locations for Neiman Marcus in Dallas, TX. With a love for regional American and Italian cuisine, shaped by his travels and extensive experience, he has also managed plant-based restaurant expansions from Maine to California and back to New York City.

John Phillips-Sandy

DIRECTOR OF FOOD & BEVERAGE

Originally from Waterville, John is excited to be back in Maine after seventeen years away. Upon completing his music degree at the University of Hartford's Hartt School, John began his career in hospitality and business management, gaining experience in both restaurants and full service hotels. Most recently, John served as Restaurant Manager at Butchers & Bakers in Farmington, Connecticut.

A firm believer in the power of community through great food and drink, John loves to study the broad history of different cuisines, wines & spirits. His days off are usually filled with listening to or playing music, reading, crafting new cocktails and spending as much time as possible with his Golden Retriever, Harper. John is thrilled to have joined the team at the Lockwood Hotel, and looks forward to welcoming guests from near and far to his hometown.
